Ingredients:
2 Tbsp. extra-virgin olive oil * 3
small carrots, chopped
¾ cup chopped onion
* 1 lb. ground beef
1-2 Tbsp. flour
* 1½ cups of frozen peas
1½ cups of frozen
corn
2 ½ tsp. McCormick Italian Herb Grinder herbs
Salt and pepper
* ¾ cup beef broth * 3
cups mashed potatoes
Directions:
Preheat
oven to 400 degrees. In a large pan,
heat olive oil over medium heat. Add
carrots and onions and cook until tender.
Add ground beef and cook, breaking up meat with a wooden spoon, until
browned. Stir in flour and cook 3 more
minutes. Stir in peas, corn and
herbs. Season with salt and pepper. Pour in beef broth and stir. Bring to a simmer and cook until slightly
thickened. Season with additional salt
and pepper to taste if necessary.
Transfer to a deep dish pie pan.
Spread mashed potatoes on top the beef mixture. Bake until golden on top and heated through,
about 25-30 minutes.
