Perfect Prime Rib

Ingredients:
One Prime Rib Roast
2 tbsp. salt   *   2 tsp. pepper   *   1 tsp. garlic powder
*These are the amount of spices I used for a 6 pound roast. Spices should be adjusted according to the size of the individual roast.

Directions:
Preheat oven to 550 degrees.
Make a rub of salt, pepper and garlic powder and apply to roast.  Place roast in a shallow roasting pan, fat side up.
Roast at 550 degrees for 5 minutes per pound for RARE, 6 minutes per pound for MEDIUM, or 7 minutes per pound for WELL DONE.
Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
At the end of the 2 hours, remove roast from oven and allow to rest for 15 minutes before slicing; it comes out perfect every time. This technique works with a beef roast as well; Try it, you won’t be disappointed.

Note:  Take care to use a clean oven when cooking at this high of a temperature.
