Grandma’s Chicken and Homemade Noodles


Ingredients:
For the soup: 
1 Broiler/Fryer, whole, cleaned
Poultry seasoning    *    salt and pepper to taste
1 cup of diced carrots   *   ½ cup of diced onions
1 cup of diced celery
For the Noodles: 
6 eggs    *    2 to 3 Tsp. baking powder
Approximately 4 cups flour

Directions:
Place cleaned whole chicken in large soup pot.  Fill pot with enough water to cover chicken.  Season the chicken with poultry seasoning, salt and pepper.  Bring to boil, reduce heat and simmer approximately 1 to 2 hours until chicken is cooked through.  Remove chicken to platter to cool.  Reserve the water.

In large bowl beat the eggs.  Sprinkle baking powder over the eggs.  Start adding flour until you have a dough consistency that you can roll out.

 Place soup pot onto medium heat.  Roll dough on lightly floured surface.  Roll to approximately ¼ inch thickness.  Roll dough into log shape adding light flour to keep from sticking together.  Slice dough and unroll noodles.  

Place noodles into your soup pot.  Add the diced carrots, celery and onion to your soup. De-bone the chicken and add bite-size pieces into the pot with the noodles. Simmer over medium heat until the noodles are tender.
